Whole wheat almond cookies

The play of flavors, the riot of colours, the magic of aroma and the weaving of that perfect recipe - well that is what excites me about cooking!


What fits it all is baking - the intoxicating aroma of cinnamon and lemon and the beautiful sight of rising of the dough is so inspiring...it makes you return to baking a new cake or a muffin or a cookie again and again.

So here's my first recipe: I am so fond of cookies...but the regular rolling of eyes and reprimand on - too much sugar and too much Maida kha rahe ho -  got me hunting into a healthy low cal maida less and sugar low recipe with nuts and seeds!

So, here's my version of Whole wheat almond cookies!
It came out crisp and yummy with goodness of almonds and health of Aata - its easy and fun! Go bake it for ur kids and not be worried about how many they gobble in just one go.
I have used both butter or ghee, they come with flavour and texture of their own. You can also experiment.

 Ingredients:

1.  1 cup whole wheat flour
2.  100 g home made white butter/ 5 tsp desi ghee
3. 1 egg (optional)
3. 8-10 almonds
4. Flaxseed and melon seeds, chocolate chips (if u want)
4. half cup brown sugar/ Jaggery powder (shakkar)
5. 1/4 cup milk to knead the flour

Recipe:


1.Grind sugar and almonds together, add it to the flour.
2. Rub in the butter with your hands (If adding egg, beat an egg and fold it also in the flour), add flaxseed, melon seeds/ chocolate chips and mix well to knead a fine dough.
3. Add a lil milk to knead, if needed. The dough is done, now wrap it in freshwrap film and refrigerate for half an hour.
4. Take a dough ball and roll it  (with a rolling pin) like a thin chapati on the cookie sheet, cut in desired shapes with a cookie cutter.
You can also cut rectangles and press a fork horizontally in the centre to make groves like the traditional aata biscuits.
5. Preheat oven at 180 degrees. Line the biscuits on the cookie tray and bake for 13 minutes.

Wait for the aroma to fill your senses and crispy cookies to melt in your mouth!
