White sauce Pasta



Bored of the regular veggie and chapati, I zeroed on pasta for today's lunch...white sauce one...
White sauce pasta always sounded a complex thing to me until I came across this super easy yummy low cal recipe. No cream..and..cheese is optional!

So, I rolled out the pasta with a lot of veggies in a lovely white sauce.

My lil girlie wakes up from her noon nap... I take her to the kitchen and open the pan to show her what's for lunch! PASTA! and she repeats it with much excitement and a big smile on her face...PHA...ASTAAA....my day is made!


Here's for you The White Sauce pasta..I prefer to add lots veggies and I realized today that zucchini tastes exceptionally well with this recipe, so do add! I also use the whole wheat pasta for all the right reasons! Use penne pasta if you want to hide veggies inside them!

Ingredients:

1. Veggies: Onions, French beans, capsicum/ bell peppers, Zucchini, babycorn, mushrooms, brocolli, carrots, olives, tomatoes (All of these go well with this recipe, you can choose which ones you like or have available at home) - quantity as much as you like, I like loads of them n u can play with colors!
2. Garlic (5-6 cloves, finely chopped)
3. 2 tsp Olive oil
4. Whole wheat pasta
5. 1-2 tsp butter
6. 1 tsp refined flour (maida)
7. 1-2 cups milk
8. salt to taste
9. black pepper
10. oregano/ mixed herbs
11 . Parmesan cheese - 2 tsp (optional)

 Method:

1. Boil pasta (take sufficient amount according to the number of servings you want) with 1 tsp oil and some salt, until done.
2. Cut the veggies, I find the elongated slender cuts nice - the veggies look great and taste better like this.
3. Boil beans, broccoli, carrots, mushrooms together, remember not to overdo - they should retain the crispness.
4. Take 2tsp olive oil, add garlic and saute till golden brown, add onions and saute till golden brown, add all other veggies and saute well. Add tomatoes at the end, don't overcook.
5. Now just shift the veggies a little in the pan and make space some space. Add butter and flour and cook a lil. Now add milk, salt, black pepper, oregano, mix well and let the sauce thicken. You can adjust the quantity of milk if you like more sauce.
6. Add pasta, mix well so that the sauce coats it all.
7. Add parmesan cheese, mix well and cook for another 5 min and then switch off the stove.
8. The pasta is ready, garnish with chilli flakes and some more herbs and olive oil, if you wish!
9. Dig in hot!
